SET -UP IMPLIMENTS you will need
A hand mixer
A straight walled deep mixing bowl
Measuring spoons/cups & some forks
Extra wide plastic wrap & rolling pin
Pie tins or dishes
A good sized bread board or anything big and flat you can press with:-?
A good counter top space for rolling ;-)LMAO
AN OVEN and pot holders:-)(both kinds) pheeeeeeeeeeeew..............ahhhh, and YES I DID INHALE, not like SOME liars I know:-O
CHEMICAL INGREDIENTS:-O
For 4 crusts (tops & bottoms)
4 cups bread flour
1/4 cup bisquik or equivilant baking mix(kroeger)
Combine the next ingredients in mixing bowl
2 TBS. Buttermilk
2 TBS. softened creme cheese
1 TBS sugar
1 & 1/2 tsp salt
1/2 stick softened butter
1 & 1/2 cups shortening (crisco is best, I like to do 50/50 plain and butter flavored:-)
dash of cinnamin
ADD 1/2 cup boiling water then beat to a frothy slurry and add the bisquik and 1 cup of the flour and fold in till smooth.
Dump in remaing flour and hand stir in with fork till it looks crumbly (DON'T SQUASH IT or form balls YET:-) just fridge for 30 minute:-)
Now would be a ggod time to make your filling:-)
Hint, if you are making apple, nuke your filling till the apples are semi-soft and drain some of the excess liquid:-)(I prefer a corn starch flour mix for thickener)
After cooling crust mix 30 minutes, Comes the tricky part:-)
take a good stretch of plastic wrap layed onto counter top, and a flour shaker or sifter and dust with flour.
Take 1/4 of cold crust mix crumbs and plop them in the middle and spread them out to near finished size, and hand pat flat, dust with more flower, cover with an equal size peice O plastic wrap and press flat with bread board or large cookie sheet:-)
Then use rolling pin to finish out to full diameter, a little larger than pie tin to be used.
NOW take an inverted pie tin(upside down) and slide it under the whole affair, centering it, then remove top plastic and put another pie plate over the whole shebang and flip the whole thing over, remove rest of plastc and trim the edges.
(save the trimmings for roll up jam toaties)
For putting the tops on the pies, slide a rolling pin under the base plastic after removing the top plastic, and lif the whole affair, and just lay er on letting it roll off the pin as ya go:-)
IT COMES OUT LIGHT FLAKEY & PERFECT EVERY TIME:-)

AND THE THANKS GIVING PIE CRUSTS ARE MADE.....an I frozem for now...and will make the filling later this week.....gonna have Apple, a Pecan, and a Pumpmkin Pie......and taking them to the kids house ......they're gonna do thanksgiving this year
