That's why you quote who you respond, too, making sure the offensive statement is highlighted. Thus, if the other guy changes his post later, it wouldn't matter, as the original remains.
I dislike limits on editing. Hours later you may wish to add a link(s) or related material, and it's best to add it to that post, not create yet another. The edit tag on the bottom of posts alone is enough "warning", as it'll warn someone that something was changed (and folks have the option to state why they edited it).
